Life Is Just A Bowl Of Cherries

Fresh cherries only come around once a year and nows the time to take advantage of the seasons bounty. Ive been gorging on these beauties. And why not? Besides being incredibly sweet and juicy, theyre loaded with Vitamin C and important disease-fighting phytochemicals.

Theres lots of varieties at the market, but my two favorites are the Bing and Ranier. Typically, the darker the cherry, the sweeter the taste, but I find the yellow-rose Rainers to be even sweeter than the mahogany-red Bings.

Whatever your preference, look for plump, firm cherries with pliable green stems. Dry stems mean old cherries. And dont pull off those stems until youre ready to start eating, since removing them promotes spoiling. Likewise, only wash what you plan to eat, because rinsing encourages molding.

Because cherries are fully ripened when you purchase them, theyll only keep for a couple of days in the fridge. Good news: they also freeze well if you want to use them a few months down the road.

When preparing recipes with cherries, pitting them with a knife can be rather tedious. Trust me. Save yourself some time and aggravation by picking up a handy-dandy cherry pitter.

Italian Beef Sandwiches and other Super Bowl Type Food



I must admit that I dont watch very much football. I grew up in a 49er household, and thats pretty much the only football Ill watch, and even then I kind of daze in and out unless its a rather exciting game. I did watch last weeks game, and followed along until the bitter end.

That said, Im a sucker for parties, and for hearty comfort food. We arent hosting a super bowl party this year because 1) it snuck up on me, and 2) Im not even sure exactly who is playing. Those East Coast teams all look/sound the same to me.

BUT! You should TOTALLY have a party. And make these sandwiches. Because they rock.

The Ingredients.
serves 8-10 for sandwiches, 6 if spooned over rice

 

3 to 4 pound beef rump roast

1 onion, sliced in rings

2 tablespoons dried oregano

2 tablespoons dried basil

1 teaspoon cayenne pepper

1 teaspoon kosher salt

1/2 teaspoon anise

1 (14.5-ounce) can whole tomatoes (undrained)

1 (12-ounce) bottle beer (Redbridge, by Anheuser Busch is gluten free)

8 hoagie rolls (I use gluten free bread)

8 slices of mozzarella cheese



The Directions.

Use a 6-quart slow cooker. Put the meat into your cooker (frozen is okay). Top with sliced onion, and all the dried herbs and spices. It will seem like there are way too many herbs—try not to worry. Add the entire can of tomatoes and bottle of beer. Cover and cook on low for 8 hours, or until meat shreds easily with two large forks. Shred the meat completely, and stir well.

Serve on toasted rolls with melted mozzarella cheese.


The french bread shown here is gluten free--its from the Against The Grain Gourmet, and comes frozen. I can only find it at one of our fancyish family-owned grocery stores, but there are distribution phone numbers on their website.

All I did was thaw the bread, slice it down the middle, then bake for 10-12 minutes at 350 degrees. Once the bread felt toasty, and the cheese was melty, I took it out.


The Verdict.


Having a party? This is a fantastic pot-luck meal, or game day feast. The resulting meat is fall-apart tender and nicely seasoned. The cayenne provides a bit of a kick, but not enough to bother sensitive palates. If you’d like more heat, sliced pickled jalapeƱo peppers works great as an additional sandwich topping. I sent the leftover meat home with my friend Sharyl, and she reported back that her three kids LOVED their sandwiches the next day.

After I posted the recipe for Sriracha Beef Cabbage Bowl that was the brilliant idea of my friend Jeanne, and it quickly become one of my favorites.  And you know how my brain takes a good recipe idea and spins it off into another fun variation, so now I've taken the basic idea of a bowl that starts with Spicy Mexican Slaw and made a version with Mexican flavors.  This Turkey and Black Bean Mexican Cabbage Bowl with Avocado Salsa features finely diced fresh Poblano chile pepper in the cabbage slaw and the salsa, and everything about this combination is amazingly flavorful.  Cabbage is one of the healthiest vegetables you can eat, and this recipe might become your favorite new way to get more cabbage into your diet!

Vegan Red Cabbage Bowl with Tofu and Peanut Sriracha Sauce

Everyone who loves crunchy sweet raw red cabbage, please raise your hand.  (Kalyn has both hands raised.)  If you're not raising your hand I hope you'll consider making this Vegan Red Cabbage Bowl using crisp lettuce in place of the cabbage because I loved how the flavors combined  in this recipe, and I'd hate for any cabbage-avoiders to miss out on the other good things here.  Two things that ramp up the flavor are tossing the tofu cubes with a soy-sesame-ginger marinade before they're baked, and a hint of Sriracha in the peanut butter flavored sauce to give it just the right amount of spicy kick.  I made this a couple of times and in the final version I scattered the tofu cubes over the salad like croutons before I drizzled the sauce over, and I thought that was the perfect finishing touch.

This new Meatless Monday recipe is also today's pick for the month of  Daily Phase One Recipes, and this delicious Vegan Spaghetti Squash and Black Bean Mexican Bowl is especially for all the vegetarians doing Phase One this month.  I do agree that Phase One is more challenging when you're not eating meat, but this recipe is a close cousin to the Greek Salad Spaghetti Squash Bowl I made during the summer, and there are quite a few more Phase One options if you sort recipes to see the Meatless category.  Jake and I both thought this was amazing, especially with a double dose of the Green Tabasco Sauce we're both so fond of!
